  • 1 Avocado diced
  • 1 can Chickpeas drained and rinsed
  • 1 Cucumber diced
  • ¼ cup Red Onion finely chopped
  • 2 tablespoon Olive Oil
  • 1 tablespoon Lemon Juice freshly squeezed
  • 1 teaspoon Salt or to taste
  • ½ teaspoon Black Pepper freshly ground

Instructions 

  1. 1. In a large mixing bowl, combine the diced avocado, chickpeas, cucumber, and red onion.
  2. 2. Drizzle with olive oil and lemon juice.
  3. 3. Season with salt and black pepper to taste.
  4. 4. Toss everything together until well combined.
  5. 5. Serve immediately or chill in the fridge for 30 minutes before serving.
