Main Ingredients
- 2 cups Black beans rinsed and drained
- 1 cup Corn kernels fresh or frozen
- 1 Red bell pepper diced
- 1 Avocado diced
- ¼ cup Red onion finely chopped
- ¼ cup Cilantro chopped
- 2 tablespoon Olive oil
- 1 Lime juiced
- 1 teaspoon Cumin
- ½ teaspoon Salt
- ¼ teaspoon Black pepper
In a large mixing bowl, combine black beans, corn, red bell pepper, avocado, red onion, and cilantro.
In a small bowl, whisk together olive oil, lime juice, cumin, salt, and black pepper.
Pour the dressing over the salad and toss gently to combine.
Serve immediately or refrigerate for later.
