Ingredients 

Main Ingredients

  • 2 Avocados peeled, pitted, and diced
  • 1 can Black Beans drained and rinsed
  • 1 Red Bell Pepper diced
  • 1 Small Red Onion diced
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Chili Powder
  • 4 Large Tortillas
  • 1 cup Shredded Lettuce
  • ½ cup Salsa
  • ½ cup Sour Cream

Instructions 

  1. 1. In a mixing bowl, combine diced avocados, black beans, red bell pepper, red onion, ground cumin, and chili powder. Mix well.
  2. 2. Heat a skillet over medium heat. Warm tortillas one at a time until soft and pliable.
  3. 3. Place a portion of the avocado and black bean mixture onto each tortilla. Top with shredded lettuce, salsa, and sour cream.
  4. 4. Roll up the tortillas, folding in the sides as you go, to form burritos. Serve immediately.
