Ingredients

  • 2 medium sweet potatoes peeled and cubed
  • 1 avocado sliced
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 8 corn tortillas
  • 1 cup red cabbage shredded
  • ¼ cup cilantro chopped
  • 1 lime cut into wedges

Instructions 

  1. Preheat the oven to 400°F (200°C).
  2. Toss the sweet potatoes with olive oil, cumin, and chili powder. Spread on a baking sheet and roast for 25-30 minutes.
  3. Warm the tortillas in a dry skillet over medium heat.
  4. Assemble the tacos: place roasted sweet potatoes, avocado slices, shredded cabbage, and cilantro on each tortilla. Serve with lime wedges.
