Main Ingredients
- 1 ripe avocado
- 1 cup canned chickpeas, drained and rinsed
- 1 tablespoon lemon juice
- 1 tablespoon olive oil
- Salt and pepper to taste
- 4 slices whole grain bread
- Optional: lettuce, tomato slices
Mash the avocado in a bowl.
Add the chickpeas and mash slightly, leaving some chunks.
Mix in lemon juice, olive oil, salt, and pepper.
Spread the mixture on two slices of bread.
Add optional lettuce and tomato slices.
Top with remaining bread slices.
