Salad Ingredients
- 4 cups Mixed greens
- 1 cup Roasted butternut squash cubed
- ½ cup Dried cranberries
- ½ cup Chopped pecans toasted
- ¼ cup Goat cheese crumbled
Dressing Ingredients
- ¼ cup Olive oil
- 2 tablespoon Apple cider vinegar
- 1 tablespoon Maple syrup
- 1 teaspoon Dijon mustard
- 1 pinch Salt to taste
- 1 pinch Black pepper to taste
In a large mixing bowl, combine the mixed greens, roasted butternut squash, dried cranberries, chopped pecans, and crumbled goat cheese.
In a small bowl, whisk together the olive oil, apple cider vinegar, maple syrup, Dijon mustard, salt, and black pepper until well combined.
