Ingredients 

Main Ingredients

  • 2 pounds potatoes waxy, like Yukon Gold or red potatoes
  • 6 slices bacon
  • 1 cup onion finely chopped
  • ¼ cup apple cider vinegar
  • ¼ cup water
  • 3 tablespoons sugar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons fresh parsley chopped

Instructions 

  1. 1. Boil the potatoes in a large pot until tender, about 15-20 minutes. Drain and let cool slightly, then slice.
  2. 2. In a skillet, cook the bacon until crispy. Remove and crumble, reserving the bacon fat.
  3. 3. Cook the onion in the bacon fat until soft.
  4. 4. Add vinegar, water, sugar, mustard, salt, and pepper to the skillet. Bring to a boil.
  5. 5. Pour the hot dressing over the potatoes. Add crumbled bacon and parsley. Toss gently to combine.
  6. 6. Serve warm or at room temperature.
