Main Ingredients
- 8 large eggs
- 4 corn tortillas cut into strips
- 1 cup shredded cheese cheddar or Monterey Jack
- 1 jalapeño diced
- 1 tomato diced
- ½ cup onion diced
- ¼ cup cilantro chopped
- 2 tablespoon vegetable oil
- to taste salt and pepper
1. Heat the oil in a skillet over medium heat.
2. Add the tortilla strips and cook until crispy. Remove and set aside.
3. In the same skillet, add the onion, jalapeño, and tomato. Cook until softened.
4. Beat the eggs in a bowl and pour into the skillet. Cook, stirring gently.
5. Add the crispy tortilla strips and cheese. Stir until the cheese melts.
6. Season with salt and pepper. Garnish with cilantro and serve.
