Ingredients 

Main Ingredients

  • 1 bunch Asparagus trimmed and cut into 2-inch pieces
  • 1 cup Cherry tomatoes halved
  • ¼ cup Red onion thinly sliced
  • 2 tablespoon Olive oil
  • 1 tablespoon Lemon juice freshly squeezed
  • 1 teaspoon Dijon mustard
  • 1 clove Garlic minced
  • to taste Salt and pepper

Instructions 

  1. 1. Bring a pot of water to a boil. Add asparagus and cook for 2-3 minutes until tender-crisp. Drain and rinse under cold water to stop the cooking process.
  2. 2. In a mixing bowl, combine asparagus, cherry tomatoes, and red onion.
  3. 3. In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, garlic, salt, and pepper.
  4. 4. Pour the dressing over the salad and toss to combine. Serve immediately or chill in the refrigerator until ready to serve.
