Instructions
Preheat oven to 400°F (200°C).
Roll out puff pastry on a baking sheet.
Mix ricotta, Parmesan, and beaten egg in a bowl. Season with salt and pepper.
Spread the ricotta mixture over the puff pastry, leaving a border.
Arrange asparagus on top of the ricotta mixture.
Drizzle with olive oil and season with salt and pepper.
Bake for 25-30 minutes or until the pastry is golden and the asparagus is tender.
