  • 1 sheet puff pastry thawed
  • 1 cup ricotta cheese
  • 0.5 cup grated Parmesan cheese
  • 1 egg beaten
  • 1 bunch asparagus trimmed
  • Salt and pepper to taste
  • Olive oil for drizzling

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. Roll out puff pastry on a baking sheet.
  3. Mix ricotta, Parmesan, and beaten egg in a bowl. Season with salt and pepper.
  4. Spread the ricotta mixture over the puff pastry, leaving a border.
  5. Arrange asparagus on top of the ricotta mixture.
  6. Drizzle with olive oil and season with salt and pepper.
  7. Bake for 25-30 minutes or until the pastry is golden and the asparagus is tender.
