Ingredients

  • 1 cup quinoa rinsed
  • 1 bunch asparagus trimmed and cut into 1-inch pieces
  • 1 cup cherry tomatoes halved
  • ¼ cup red onion finely chopped
  • ¼ cup olive oil
  • 2 tablespoon lemon juice freshly squeezed
  • 1 teaspoon salt
  • ½ teaspoon black pepper freshly ground
  • ¼ cup feta cheese crumbled

Instructions 

  1. 1. Cook the quinoa according to package instructions. Set aside to cool.
  2. 2. Preheat the oven to 400°F (200°C). Place the asparagus on a baking sheet, drizzle with olive oil, and roast for 10-15 minutes until tender.
  3. 3. In a large mixing bowl, combine the cooked quinoa, roasted asparagus, cherry tomatoes, and red onion.
  4. 4. In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper. Pour over the salad and toss to combine.
  5. 5. Sprinkle the crumbled feta cheese on top before serving.
