- 1 pie crust
- 1 bunch asparagus, trimmed and cut into 1-inch pieces
- 1 cup shredded cheese (cheddar or gruyere)
- 1 cup milk
- 0.5 cup heavy cream
- 4 large eggs
- Salt and pepper to taste
Preheat oven to 375°F (190°C).
Place pie crust in a pie dish and bake for 10 minutes.
Blanch asparagus in boiling water for 2-3 minutes, then drain.
In a bowl, whisk together eggs, milk, cream, salt, and pepper.
Spread asparagus and cheese evenly in the pie crust.
Pour egg mixture over the asparagus and cheese.
Bake for 30-35 minutes, or until the quiche is set and golden brown.
