  • 1 pie crust
  • 1 bunch asparagus, trimmed and cut into 1-inch pieces
  • 1 cup shredded cheese (cheddar or gruyere)
  • 1 cup milk
  • 0.5 cup heavy cream
  • 4 large eggs
  • Salt and pepper to taste

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. Place pie crust in a pie dish and bake for 10 minutes.
  3. Blanch asparagus in boiling water for 2-3 minutes, then drain.
  4. In a bowl, whisk together eggs, milk, cream, salt, and pepper.
  5. Spread asparagus and cheese evenly in the pie crust.
  6. Pour egg mixture over the asparagus and cheese.
  7. Bake for 30-35 minutes, or until the quiche is set and golden brown.
