Main Ingredients
- 1 bunch Asparagus trimmed
- 4 slices Prosciutto
- 2 tablespoon Olive oil
- 1 tablespoon Lemon juice freshly squeezed
- 1 teaspoon Dijon mustard
- 1 pinch Salt to taste
- 1 pinch Black pepper to taste
1. Preheat your oven to 400°F (200°C).
2. Place the asparagus on a baking sheet, drizzle with 1 tablespoon of olive oil, and season with salt and pepper. Roast for 10 minutes or until tender.
3. In a mixing bowl, whisk together the remaining olive oil, lemon juice, Dijon mustard, and a pinch of salt and pepper.
4. Arrange the roasted asparagus on a serving platter, drape the prosciutto slices over the top, and drizzle with the dressing.
5. Serve immediately.
