Ingredients

  • 1 bunch Asparagus trimmed
  • 4 slices Prosciutto
  • 2 tablespoon Olive oil
  • 1 tablespoon Lemon juice freshly squeezed
  • 1 teaspoon Dijon mustard
  • 1 pinch Salt to taste
  • 1 pinch Black pepper to taste

Instructions 

  1. 1. Preheat your oven to 400°F (200°C).
  2. 2. Place the asparagus on a baking sheet, drizzle with 1 tablespoon of olive oil, and season with salt and pepper. Roast for 10 minutes or until tender.
  3. 3. In a mixing bowl, whisk together the remaining olive oil, lemon juice, Dijon mustard, and a pinch of salt and pepper.
  4. 4. Arrange the roasted asparagus on a serving platter, drape the prosciutto slices over the top, and drizzle with the dressing.
  5. 5. Serve immediately.
