  • 1 lb Asparagus trimmed
  • ¼ cup Parmesan cheese shaved
  • 2 tablespoon Olive oil
  • 1 tablespoon Lemon juice freshly squeezed
  • 1 clove Garlic minced
  • ¼ teaspoon Salt
  • ¼ teaspoon Black pepper freshly ground

Instructions 

  1. 1. Trim the asparagus and shave into thin ribbons using a vegetable peeler.
  2. 2. In a mixing bowl, combine olive oil, lemon juice, minced garlic, salt, and pepper.
  3. 3. Add the asparagus ribbons to the bowl and toss to coat.
  4. 4. Top with shaved Parmesan cheese and serve immediately.
