Ingredients

  • 1 lb Asparagus trimmed and chopped
  • 16 oz Cream Cheese softened
  • 3 Eggs large
  • ½ cup Parmesan Cheese grated
  • ½ cup Heavy Cream
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper freshly ground

Instructions 

  1. Preheat your oven to 350°F (175°C).
  2. Blanch the asparagus in boiling water for 2-3 minutes, then drain and set aside.
  3. In a mixing bowl, beat the cream cheese until smooth. Add the eggs one at a time, beating well after each addition.
  4. Stir in the Parmesan cheese, heavy cream, salt, and black pepper.
  5. Fold in the blanched asparagus.
  6. Pour the mixture into a greased springform pan.
  7. Bake for 50-60 minutes, or until the center is set and the top is golden brown.
  8. Let the cheesecake cool before removing it from the pan. Serve warm or at room temperature.
