Ingredients

  • 4 eggs
  • 1 cup arugula fresh
  • 1 tablespoon olive oil

Kale Pesto

  • 2 cups kale chopped
  • ¼ cup parmesan cheese grated
  • ¼ cup pine nuts toasted
  • 1 clove garlic minced
  • ¼ cup olive oil
  • 1 tablespoon lemon juice fresh
  • ½ teaspoon salt

Instructions 

  1. 1. In a blender, combine kale, parmesan, pine nuts, garlic, olive oil, lemon juice, and salt. Blend until smooth to make the pesto.
  2. 2. In a bowl, whisk the eggs until well combined.
  3. 3. Heat olive oil in a skillet over medium heat. Add the arugula and cook until wilted, about 2 minutes.
  4. 4. Pour the eggs into the skillet and scramble until cooked through, about 3-4 minutes.
  5. 5. Serve the scramble topped with a generous dollop of kale pesto.
