Ingredients 

Salad

  • 6 cups Arugula washed and dried
  • 1 cup Cherry tomatoes halved
  • 0.25 cup Parmesan cheese shaved

Lemon Vinaigrette

  • 0.25 cup Olive oil
  • 2 tablespoon Lemon juice freshly squeezed
  • 1 teaspoon Dijon mustard
  • 1 clove Garlic minced
  • to taste Salt
  • to taste Black pepper freshly ground

Instructions 

  1. In a mixing bowl, whisk together olive oil, lemon juice, Dijon mustard, minced garlic, salt, and black pepper to make the vinaigrette.
  2. In a large salad bowl, combine arugula, cherry tomatoes, and shaved Parmesan cheese.
  3. Drizzle the lemon vinaigrette over the salad and toss gently to combine.
  4. Serve immediately.
