Salad
- 6 cups Arugula washed and dried
- 1 cup Cherry tomatoes halved
- 0.25 cup Parmesan cheese shaved
Lemon Vinaigrette
- 0.25 cup Olive oil
- 2 tablespoon Lemon juice freshly squeezed
- 1 teaspoon Dijon mustard
- 1 clove Garlic minced
- to taste Salt
- to taste Black pepper freshly ground
In a mixing bowl, whisk together olive oil, lemon juice, Dijon mustard, minced garlic, salt, and black pepper to make the vinaigrette.
In a large salad bowl, combine arugula, cherry tomatoes, and shaved Parmesan cheese.
Drizzle the lemon vinaigrette over the salad and toss gently to combine.
Serve immediately.
