Artichoke Pasta Salad

Main Ingredients
- 8 oz Pasta any short pasta
- 1 cup Artichoke Hearts quartered, marinated
- ½ cup Cherry Tomatoes halved
- ¼ cup Red Onion thinly sliced
- ¼ cup Olive Oil
- 2 tablespoon Lemon Juice freshly squeezed
- 1 teaspoon Dijon Mustard
- 1 clove Garlic minced
- to taste Salt
- to taste Black Pepper freshly ground
- ¼ cup Fresh Basil chopped
Cook the pasta according to package instructions. Drain and rinse under cold water.
In a large mixing bowl, combine the pasta, artichoke hearts, cherry tomatoes, and red onion.
In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, garlic, salt, and pepper.
Pour the dressing over the pasta mixture and toss to coat evenly.
Garnish with fresh basil before serving.
