  • 2 slices Bread whole grain
  • 1 Avocado ripe
  • 1 cup Artichoke Hearts canned, drained and chopped
  • 1 tablespoon Olive Oil
  • 1 teaspoon Lemon Juice freshly squeezed
  • to taste Salt
  • to taste Black Pepper freshly ground

Instructions 

  1. 1. Toast the bread slices until golden brown.
  2. 2. In a bowl, mash the avocado with a fork. Add lemon juice, salt, and pepper. Mix well.
  3. 3. Spread the mashed avocado evenly on the toasted bread slices.
  4. 4. Top with chopped artichoke hearts and drizzle with olive oil.
