  • 1 cup quinoa rinsed
  • 2 cups water
  • ½ teaspoon salt
  • 1 apple diced
  • ½ cup walnuts chopped
  • ¼ cup dried cranberries
  • ¼ cup feta cheese crumbled
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon honey
  • Salt and pepper to taste

Instructions 

  1. Cook quinoa: In a medium pot, bring quinoa, water, and salt to a boil. Reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let it sit for 5 minutes, then fluff with a fork.
  2. Prepare dressing: In a small bowl, whisk together olive oil, apple cider vinegar, honey, salt, and pepper.
  3. Combine ingredients: In a large bowl, combine cooked quinoa, apple, walnuts, cranberries, and feta cheese. Pour dressing over the salad and toss to combine.
  4. Serve: Serve immediately or refrigerate for up to 2 days.
