Apple Walnut Quinoa Salad

- 1 cup quinoa rinsed
- 2 cups water
- ½ teaspoon salt
- 1 apple diced
- ½ cup walnuts chopped
- ¼ cup dried cranberries
- ¼ cup feta cheese crumbled
- 2 tablespoons olive oil
- 1 tablespoon apple cider vinegar
- 1 teaspoon honey
- Salt and pepper to taste
Cook quinoa: In a medium pot, bring quinoa, water, and salt to a boil. Reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let it sit for 5 minutes, then fluff with a fork.
Prepare dressing: In a small bowl, whisk together olive oil, apple cider vinegar, honey, salt, and pepper.
Combine ingredients: In a large bowl, combine cooked quinoa, apple, walnuts, cranberries, and feta cheese. Pour dressing over the salad and toss to combine.
Serve: Serve immediately or refrigerate for up to 2 days.
