Ingredients 

Main Ingredients

  • 1 cup farro
  • 2 cups water
  • ½ teaspoon salt
  • 2 apples, diced
  • ½ cup walnuts, chopped
  • ¼ cup dried cranberries
  • ¼ cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon honey
  • Salt and pepper to taste

Instructions 

  1. Rinse farro under cold water.
  2. In a pot, combine farro, water, and salt. Bring to a boil.
  3. Reduce heat, cover, and simmer for 30 minutes or until farro is tender.
  4. Drain any excess water and let farro cool.
  5. In a large bowl, combine farro, apples, walnuts, cranberries, and feta.
  6. In a small bowl, whisk together olive oil, apple cider vinegar, honey, salt, and pepper.
  7. Pour dressing over salad and toss to combine.
