Ingredients

  • 1 cup Grated Carrots
  • 1 cup Pitted Dates
  • 1 cup Walnuts
  • ½ cup Shredded Coconut
  • 1 teaspoon Ground Cinnamon
  • ½ teaspoon Ground Nutmeg
  • 1 teaspoon Vanilla Extract
  • ¼ teaspoon Salt

Instructions 

  1. 1. Add the grated carrots, pitted dates, and walnuts to a food processor. Pulse until finely chopped.
  2. 2. Add the shredded coconut, ground cinnamon, ground nutmeg, vanilla extract, and salt. Pulse until the mixture comes together.
  3. 3. Roll the mixture into small balls, about 1 inch in diameter.
  4. 4. Store in the refrigerator for up to a week.
