Ingredients

  • 1 cup Almond flour
  • 2 tablespoon Coconut flour
  • 1 teaspoon Baking powder
  • ¼ teaspoon Salt
  • 3 large Eggs
  • ¼ cup Almond milk
  • 1 teaspoon Vanilla extract
  • 2 tablespoon Maple syrup
  • 2 tablespoon Coconut oil (melted)

Instructions 

  1. In a mixing bowl, whisk together almond flour, coconut flour, baking powder, and salt.
  2. In another bowl, beat the eggs, then add almond milk, vanilla extract, maple syrup, and melted coconut oil. Mix well.
  3. Combine the wet and dry ingredients, stirring until just combined.
  4. Heat a non-stick skillet over medium heat and lightly grease with coconut oil.
  5. Pour ¼ cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown.
  6. Serve warm with your favorite toppings.
