  • 1 teaspoon onion powder
  • 1 teaspoon paprika

Instructions 

  1. Preheat the air fryer to 375°F (190°C).
  2. Cut the eggplant into ½-inch thick slices.
  3. In a bowl, mix olive oil, garlic powder, onion powder, paprika, salt, and pepper.
  4. Brush the eggplant slices with the mixture.
  5. Place the slices in the air fryer basket in a single layer.
  6. Cook for 15-20 minutes, flipping halfway through, until golden and crispy.
