Ingredients 

Main Ingredients

  • 1 cup adzuki beans dried
  • 2 cups water
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1 clove garlic minced
  • 1 inch ginger grated
  • 1 cup cooked rice
  • 1 cup mixed vegetables steamed

Instructions 

  1. 1. Rinse the adzuki beans and soak them in water for at least 4 hours or overnight.
  2. 2. Drain and rinse the beans. In a pot, add the beans and 2 cups of water. Bring to a boil, then reduce to a simmer and cook for about 30 minutes or until tender.
  3. 3. In a small bowl, mix soy sauce, sesame oil, minced garlic, and grated ginger.
  4. 4. Once the beans are cooked, drain any excess water. Stir in the soy sauce mixture.
  5. 5. Serve the beans over cooked rice and top with steamed mixed vegetables.
