Pimento Cheese

This recipe adapted from southern chef Scott Peacock, is also great for spreading on crackers or serving with crudites. Or try it on a burger.

  • 2 1/2 cups extra-sharp cheddar cheese, grated and brought to room temperature
  • 2 teaspoons grated onion
  • 1/8 teaspoon cayenne
  • 3/4 cup mayonnaise
  • 3 tablespoons roasted red pepper, peeled, seeded, and finely chopped
  • fine sea salt
  • black pepper


  1. Stir together the cheese, onion, cayenne, mayonnaise and red pepper in a mixing bowl until it is creamy. Taste and add a pinch of salt and a few grindings of black pepper, if needed.

  2. Cover and refrigerate until ready to use. Remove from the refrigerator 15 to 20 minutes before serving.
