Ingredients 

Main Ingredients

  • 2 large Sweet Potatoes peeled and cubed
  • 1 tablespoon Olive Oil
  • 1 teaspoon Chili Powder
  • 1 teaspoon Cumin
  • 1 pinch Salt to taste
  • 4 pieces Tostada Shells
  • 2 Avocados sliced
  • 1 cup Black Beans cooked or canned, drained and rinsed
  • ¼ cup Cilantro chopped
  • 1 Lime cut into wedges

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, toss the cubed sweet potatoes with olive oil, chili powder, cumin, and salt.
  3. Spread the sweet potatoes on a baking sheet and roast for 25-30 minutes, until tender and slightly crispy.
  4. While the sweet potatoes are roasting, prepare the other ingredients. Slice the avocados, chop the cilantro, and drain and rinse the black beans.
  5. Once the sweet potatoes are done, assemble the tostadas. Start with a layer of sweet potatoes, followed by black beans, avocado slices, and a sprinkle of cilantro.
  6. Serve with lime wedges on the side.
