  • 4 pieces Corn tortillas
  • 2 cups Sweet corn kernels fresh or frozen
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Ground cumin
  • 1 tablespoon Olive oil
  • 1 cup Black beans cooked
  • 1 cup Cherry tomatoes halved
  • 0.5 cup Red onion finely chopped
  • 0.25 cup Cilantro chopped
  • 1 piece Lime cut into wedges

Instructions 

  1. 1. Preheat your oven to 350°F (175°C).
  2. 2. Place the corn tortillas on a baking sheet and bake for 5-7 minutes until crispy.
  3. 3. In a skillet, heat the olive oil over medium heat. Add the sweet corn, smoked paprika, and ground cumin. Cook for 5 minutes, stirring occasionally.
  4. 4. Assemble the tostadas by spreading a layer of black beans on each tortilla, followed by the smoky sweet corn mixture.
  5. 5. Top with cherry tomatoes, red onion, and cilantro. Serve with lime wedges on the side.
