- 4 large Bell Peppers cut into wedges
- 1 cup Shredded Cheese cheddar or your choice
- 0.5 cup Black Beans cooked
- 0.5 cup Corn cooked
- 1 tablespoon Olive Oil
- 1 teaspoon Chili Powder
- 1 teaspoon Cumin
- 0.5 cup Salsa for serving
- 0.25 cup Sour Cream for serving
1. Preheat your oven to 400°F (200°C).
2. Arrange the bell pepper wedges on a baking sheet.
3. Drizzle olive oil over the bell peppers and sprinkle with chili powder and cumin.
4. Top with black beans, corn, and shredded cheese.
5. Bake for 10 minutes or until the cheese is melted and bubbly.
6. Serve with salsa and sour cream on the side.
